This salad is very versatile. You can add your favorite veggies and even meats. I usually add a nice smoked chorizo, but you can also use another sausage or skip the meat altogether!
Ingredients:
- Pesto
- 1 lb. medium sized pasta, like rotini or bowties
- 1 lb. cherry tomatoes, cut in half
- 1 lb. fresh mozzarella cheese, cut into cubes
- 8 ounces Smoked Chorizo, cut into cubes
Directions:
- Prepare the Pesto, set aside
- Boil and cook your pasta until it has just passed al dente. When pasta becomes cold, it gets harder, so I prefer to cook the pasta until it is more well done.
- Rinse the pasta – I find that removing the starch is good for a cold pasta salad and also helps stop the cooking process. Please don’t rinse pasta normally though!
- Chop all your ingredients remembering that you can add/remove ingredients to your liking! This is a very versatile recipe.
- Combine pasta, pesto, tomatoes, cheese and chorizo and combine.
Serve chilled
