- 4-8 bone-in, skin-on chicken thighs

- 2 tablespoons olive oil or avocado oil
- 4 Italian sausage links sliced into 1-inch pieces.
- 1-2 onion thinly sliced.
- 4-8 cloves garlic, minced.
- 1 bell pepper, sliced (red, green, or both)
- 1/2 cup chicken broth
- 1/4 cup white wine (optional)
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Handful fresh basil
- Handful sliced mushrooms.
- Vinegar Peppers to taste
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup chopped fresh parsley for garnish.
Instructions:
- Preheat your oven to 375°F (190°C).
- Season the chicken thighs generously with salt and pepper, then dredge them in flour, shaking off any excess.
- In a large skillet or Dutch oven, heat olive oil over medium-high heat. Add the chicken pieces skin-side down and cook until golden brown, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced sausage and cook until browned, about 5 minutes. Remove the sausage and set aside.
- Add the sliced onion and mushrooms to the skillet and cook until softened, about 3 minutes. Stir in the minced garlic and cook for an additional 30 seconds.
- Add the sliced bell pepper to the skillet and cook for another 3-4 minutes until slightly softened.
- Deglaze the skillet with chicken broth and white wine (if using), scraping up any browned bits from the bottom of the pan.
- Return the chicken and sausage to the skillet. Add the dried oregano, thyme, rosemary, and red pepper flakes (if using). Stir everything together.
