Chicken Scarapiello

Chicken Scarpiello is a classic Italian-American dish featuring chicken, sausage, peppers, onions, and sometimes potatoes cooked together in a delicious and flavorful sauce. Ingredients:

  • 4-8 bone-in, skin-on chicken thighs
  • Salt and pepper to taste
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil or avocado oil
  • 4 Italian sausage links sliced into 1-inch pieces.
  • 1-2 onion thinly sliced.
  • 4-8 cloves garlic, minced.
  • 1 bell pepper, sliced (red, green, or both)
  • 1/2 cup chicken broth
  • 1/4 cup white wine (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Handful fresh basil
  • Handful sliced mushrooms.
  • Vinegar Peppers to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup chopped fresh parsley for garnish.

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken thighs generously with salt and pepper, then dredge them in flour, shaking off any excess.
  3. In a large skillet or Dutch oven, heat olive oil over medium-high heat. Add the chicken pieces skin-side down and cook until golden brown, about 5 minutes per side. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the sliced sausage and cook until browned, about 5 minutes. Remove the sausage and set aside.
  5. Add the sliced onion and mushrooms to the skillet and cook until softened, about 3 minutes. Stir in the minced garlic and cook for an additional 30 seconds.
  6. Add the sliced bell pepper to the skillet and cook for another 3-4 minutes until slightly softened.
  7. Deglaze the skillet with chicken broth and white wine (if using), scraping up any browned bits from the bottom of the pan.
  8. Return the chicken and sausage to the skillet. Add the dried oregano, thyme, rosemary, and red pepper flakes (if using). Stir everything together.
  9. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
  10. Garnish with chopped fresh parsley before serving.
