Bruschetta & Brie Pasta

This pasta is so quick and simple. It’s also a wonderful option for the summertime when you want to use your stove and oven as little as possible. The only “cooking” you’ll be doing is boiling your pasta! Not only is this pasta amazing as described, it’s super versatile and you could add grilled chicken, shrimp or other veggies to easily modify it to your liking!

Ingredients: 

  • Spaghetti, 1lb.
  • Tomatoes, 4 chopped and very ripe
  • Fresh Basil, one large stem, about 15 large leaves
  • Garlic, 5-6 cloves
  • Brie, 0.5 lb and room temperature
  • Extra Virgin Olive Oil, ⅓ cup
  • Salt and Pepper to taste
  • Reserved Pasta water as needed & optional

Directions:

  1. Boil salted water for your spaghetti and follow the directions on the box.
  2. Chop tomatoes, basil, and garlic. Combine in a large bowl.
  3. Remove the rind of the brie on the edges, but no need to worry about the rind on the top and bottom. Roughly chop the brie and add to the tomato mixture.
  4. Add Extra Virgin Olive Oil.
  5. Add salt and pepper to your liking. If you like spicy pasta, crushed red pepper would be a great addition.
  6. After the pasta is done cooking, remove about a cup of starchy pasta water and set aside. This may be helpful to add to your pasta to more fully distribute the sauce. I find this varies depending on how much juice I get from my tomatoes. This is an optional step.
  7. Add your drained pasta to your tomato mixture and toss until the veggies are the cheese is soft and melty from the heat of the pasta.
  8. Serve hot with fresh basil and shredded parmesan cheese if you’d like.
