🐶 Our family loves celebrating our dog’s birthday. What a happy reason to celebrate! But her celebration wouldn’t be complete without a dog-friendly treat! These muffins are full of healthy ingredients for dogs and you can easily make them with ingredients in your home! Feel free to try them in mini muffins for smaller treats and freeze them if you want to keep them fresh for a longer period of time.
Muffin Ingredients:
- 1 cup all purpose flour
- 1 cup oat flour (I just food process rolled oats for this!)
- ½ teaspoon baking soda
- ½ cup (4 ounces) unsweetened applesauce
- 1 banana, mashed
- 1 medium apple, chopped
- 1 egg
- 2 tablespoons melted coconut oil (plus a small amount to prepare muffin tin)
Frosting Ingredients:
- 10 ounces greek yogurt, plain
- .25 ounces gelatin, unsweet/plain (Knox sells boxes of .25 ounch pouches)
- 1 strawberry, ripe & grated
Muffin Directions:
- Preheat oven to 350 degrees.
- Prepare a muffin tin by greasing them with some melted coconut oil
- Combine all purpose flour, oat flour, and baking soda. Mix and set aside
- In a separate bowl combine apple sauce, mashed banana, diced apple, egg & coconut oil.
- Add wet ingredients to dry and fold until mixed and you can no longer see any dry ingredients.
- Evenly distribute the batter into muffin tins.
- Bake for 20-25 minutes until cooked through.
Frosting Directions
- In a small bowl, add 3 tablespoons of water and sprinkle the gelatin powder on top. Allow to sit for 5 minutes.
- Next microwave the gelatin for 30 second intervals & stir until the power is fully dissolved. You should only need about 1 minute total.
- Allow the gelatin to cool.
- Beat the greek yogurt on high for 3-5 minutes.
- Grate a ripe strawberry into the yogurt to give color and a little flavor. You can also mash it with a spoon.
- Add the cooled gelatin liquid to the greek yogurt and whip on high for 3-5 minutes.
- Allow to set in the refrigerator until you are ready to use.
- The gelatin will stabilize the greek yogurt and keep it firm.
- You can easily pipe this dog-friendly frosting onto your cupcakes to make them beautiful.
- You can work with other fruits to give it color as well, such as raspberries, blueberries or blackberries!
