For Father’s Day 2020, Dad requested an apple crumb cake for our brunch gathering. This cake is very versatile as a brunch cake or an after dinner dessert. You could even swap the apples for other fruits like pear or peach to change it up!

Crumb Ingredients
- ½ cup brown sugar
- ¼ cup granulated sugar
- ¼ cup oats
- 1 tablespoon of cinnamon or pumpkin pie spice
- ¼ teaspoon salt
- ½ cup melted unsalted butter
- 1 ¼ cup all purpose flour
- Combine sugars, oats, cinnamon, and salt
- Add the melted butter and combine fully with a fork
- Add flour and stir with fork to create crumbs
- Set aside
Cake Ingredients
- 1 ¼ cup all purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter (room temp)
- ¾ cup granulated sugar
- 2 eggs (room temp)
- ½ cup nonfat Greek yogurt (room temp)
- 1 teaspoon vanilla
- 3 baking apples (like Granny Smith, Fuji, Cortland
- 1 teaspoon cinnamon or pumpkin pie spice
Directions
- Peel, core, and dice your apples. Add them to a bowl and combine with cinnamon or pumpkin pie spice. Set aside
- In another bowl, combine all dry ingredients
- In a stand mixer bowl, cream together the butter and sugar
- Add eggs, yogurt and vanilla to the butter and sugar. Mix on medium speed until well incorporated.
- Add the dry ingredients into the wet ingredients and mix until just combined.
Assemble your cake!
- Preheat the oven to 350 degrees
- Grease a 10” bundt pan or springform pan with a bundt insert with butter or nonstick cake spray.
- Put ½ of your crumb into the bottom of the pan.
- Then layer all of your apples on top of the crumb.
- Layer your cake batter.
- Top with remaining crumb and press lightly into the batter.
- Bake for 40-45 minutes until a toothpick comes out clean.
Serve with sprinkled powdered sugar.
