Start with a brine. A basic brine consists of sugar, salt, water, and seasonings. Variations can be made by using different kinds of peppercorns, thyme, even chili peppers! Be sure to pat pork chops dry before brining…brine for 24 hours. like a 5-8 Bone Pork Roast to start.
Pat dry season with blended dried Greek spices. I use combo of rosemary, oregano, parsley, garlic, salt, pepper, thyme, onion powder.
I also like to butterfly the roast as seen in video then roll up and tie.
Roast @ 425 till 155 degrees! You can roast this and potatoes at the same time.
Cube 3lbs Yukon Gold potatoes, and microwave for 5- 8 minutes. Then spread on baking sheet and coast with olive oil mixture below.
4 lemons juiced and zested – grated garlic, oregano, paprika, rosemary, thyme grated onion and garlic. Olive oil. I had a little chicken fat, so I threw that in there as well.
Let potatoes soak. Roast 425 1hour -top chopped parsley and lemon.
