Thai Curry Half Duck

Pre-Cooked Ducked from Maple Leaf Farms bought at Costco). Wow it was sooooooo Good!I was not sure what to expect but have to say I was pleasantly surprised by how good the precooked duck was.  I am not a fan of the packaged orange sauce that it came with, so I just tossed it and made my own Thai curry sauce!

So anyway, check out the video and quick instructions below.

Ingredients:

1 precooked half duck (Heat that in oven with little salt for about 20 minutes at 350 degrees)

Vegetable chopped and sliced – red pepper, eggplant, green onion, red onion, shallot, cilantro, halved cherry tomatoes.

Diced Ginger and Garlic

1 heaping tablespoon red Thai curry 

1 heaping tablespoon tomato paste

2-3 Tablespoons of fish sauce to taste

Dried Thai chili to taste

Juice of 1-2 Limes to Taste

Toss curry paste, tomato paste, garlic, chili, Onion into pan with and cook down till fragrant and soft.  Add other vegetables, cook down a few minutes, then add stock, simmer, then add coconut milk, and simmer again.  At the end add cilantro and green onions.  Serve with jasmine white rice and set duck atop!   All done… This huge meal for two cost $25 dollars at home.  Would easily cost over $80 in any local Thai restaurant!  Also, it’s a great easy meal when having guests over!
